A woodcut is a form of relief printing, where knives and other tools are used to cut and carve into the surface of timber. The ink is then applied to the woodblock, and transferred using a printing press or baron onto paper (or whichever final print material you decide to use!)
The end result is a monochromatic image. Multicolour prints can be achieved by using multiple blocks, or by a reduction process (Carving bits of the block away with each colour change).
